- 8 slices of crusty Italian bread
- 3 Tbsp. Earth Balance margarine or olive oil
- 1/2 c. creamy avocado pesto
- 1 c. shredded vegan mozzarella
- 1 c. shredded vegan cheddar
- 2 ripe tomatoes, diced
- Spread two slices of bread with margarine or olive oil. Spread other side of slices with avocado pesto.
- Sprinkle vegan cheese and tomatoes over the pesto and the put two slices together to make a sandwich. Toast in skillet until browned on both sides.
