Grilled Pesto Cheese Sandwich


  • 8 slices of crusty Italian bread
  • 3 Tbsp. Earth Balance margarine or olive oil
  • 1/2 c. creamy avocado pesto
  • 1 c. shredded vegan mozzarella
  • 1 c. shredded vegan cheddar
  • 2 ripe tomatoes, diced


  1. Spread two slices of bread with margarine or olive oil. Spread other side of slices with avocado pesto.
  2. Sprinkle vegan cheese and tomatoes over the pesto and the put two slices together to make a sandwich. Toast in skillet until browned on both sides.
