Gluten-Free Brazil Nut Cookies


  1. 1 c. brown rice flour
  2. 1/2 c. potato flour
  3. 1/4 c. soy flour
  4. 1/4 c. tapioca flour
  5. 1/2 c. chopped Brazil nuts
  6. 1 c. turbinado sugar or agave nectar
  7. 1/2 tsp. sea salt
  8. 2 tsp. guar gum
  9. 1 Tbsp. Ener-G baking powder
  10. 1/2 c. canola oil
  11. 1 c. almond milk or soy milk
  12. 1 tsp. vanilla


  1. Combine dry ingredients, including nuts and mix together well. Mix in wet ingredients.
  2. Preheat oven to 350 degrees F.
  3. Scoop by tablespoons onto oiled cookie sheet and flatten into shape with moistened fingers. Bake for 16 – 18 minutes, or until edges are lightly browned.
