Garlic Mashed Potatoes


  • 2 1/4 lb. Yukon Gold potatoes
  • 3 whole garlic cloves
  • 1/2 c. soy sour cream
  • 2 Tbsp. soy margarine
  • 1/4 tsp. sea salt
  • chives for garnish


  1. Steam potatoes and garlic until tender. While potatoes are still hot, mash lightly, then add soy margarine and sour sour cream.
  2. Mash until smooth. Add salt to taste. Spoon into serving dish and garnish with chives.
