- 2 1/4 lb. Yukon Gold potatoes
- 3 whole garlic cloves
- 1/2 c. soy sour cream
- 2 Tbsp. soy margarine
- 1/4 tsp. sea salt
- chives for garnish
- Steam potatoes and garlic until tender. While potatoes are still hot, mash lightly, then add soy margarine and sour sour cream.
- Mash until smooth. Add salt to taste. Spoon into serving dish and garnish with chives.
