Fruit Sauce for Meatballs

1+1/2 c. fruit-sweetened apricot fruit spread
1 c. finely chopped red onion
1 c. organic catsup
1/2 tsp. basil
1/2 tsp. salt
2 Tbsp. fresh lemon juice
1 Tbsp. Earth Balance margarine


  1. In a medium saucepan, combine onions and margarine and sauté until transparent.
  2. Add fruit spread, catsup, lemon juice and remaining seasonings and cook until thickened on medium heat. This usually takes about 4 – 5 minutes.
