Frosted Maple Pecan Cookies


  • 1/2 c. Earth Balance soy margarine
  • 1/2 c. organic brown sugar, packed
  • 3 Tbsp. agave nectar
  • 1 tsp. maple flavoring
  • 1 c. gluten free all-purpose flour or white wheat flour
  • 1/2 tsp. salt
  • 1 c. quick oats
  • 1/2 c. pecans, coarsely chopped
  • 1/4 dates, chopped
  • 1/2 c. toasted pecans for garnish


  • 2 Tbsp. Tofutti cream cheese, softened
  • 2 Tbsp. Earth Balance soy margarine
  • 1 tsp. maple flavoring
  • 1 to 1-1/2 c. powdered sugar, sifted


  1. Using a hand blender, cream margarine, agave nectar, maple flavoring and brown sugar together. Stir in flour a little at a time.
  2. Add oats, dates, nuts, and salt and mix well.
  3. Drop onto parchment-lined baking sheet and bake at 350 degrees for 10 – 12 minutes.
  4. Cool before frosting. To make frosting, combine and stir frosting ingredients together until smooth. Spread over cookies and garnish with toasted pecans.
