Fried Green Tomatoes


  • 2 medium green tomatoes
  • 1 c. whole white wheat flour
  • 1 c. cornmeal
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/4 tsp. cayenne pepper
  • 1 c. apple juice
  • canola oil as needed


  1. Heat a small amount of oil in a skillet. Mix dry ingredients for breading.
  2. Slice tomatoes about 1/4 inch thick and dip tomato slices into apple juice and then into breading mixture.
  3. Repeat, patting breading meal into place. Fry until golden on each side. Serve hot.
