- 1 1/2 c. mango, peeled and chopped
- 1 1/2 c. tomato, chopped
- 2 Tbsp. fresh cilantro, minced
- 2 Tbsp. fresh lime juice
- 1 Tbsp. banana pepper, seeded and chopped
- 1 tsp. fresh ginger, peeled and minced
- 1/4 tsp. cayenne pepper, optional
- 3 c. favorite corn tortilla chips
- Combine all ingredients one by one except corn tortilla chips; toss well. Cover mango salsa and chill.
- Serve with favorite corn tortilla chips. Makes 3 cups of salsa.
