Fresh Mango Salsa


  • 1 1/2 c. mango, peeled and chopped
  • 1 1/2 c. tomato, chopped
  • 2 Tbsp. fresh cilantro, minced
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. banana pepper, seeded and chopped
  • 1 tsp. fresh ginger, peeled and minced
  • 1/4 tsp. cayenne pepper, optional
  • 3 c. favorite corn tortilla chips


  1. Combine all ingredients one by one except corn tortilla chips; toss well. Cover mango salsa and chill.
  2. Serve with favorite corn tortilla chips. Makes 3 cups of salsa.
