- 1 1/2 c. fresh mango, peeled and chopped
- 1 1/2 c. tomato, chopped
- 2 Tbsp. minced fresh cilantro
- 2 Tbsp. fresh lime juice
- 1 Tbsp. banana pepper, seeded and chopped
- 1 tsp. fresh ginger, peeled and minced
- 1/4 tsp. cayenne pepper, optional
- 3 c. corn tortilla chips
- In a small mixing bowl, combine diced mangoes and tomatoes, ginger, cilantro, lime juice, banana pepper and cayenne.
- Cover and place in refrigerator to marinate until chilled.
- Serve with tortilla chips.
