Fresh Mango Salsa


  • 1 1/2 c. fresh mango, peeled and chopped
  • 1 1/2 c. tomato, chopped
  • 2 Tbsp. minced fresh cilantro
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. banana pepper, seeded and chopped
  • 1 tsp. fresh ginger, peeled and minced
  • 1/4 tsp. cayenne pepper, optional
  • 3 c. corn tortilla chips


  1. In a small mixing bowl, combine diced mangoes and tomatoes, ginger, cilantro, lime juice, banana pepper and cayenne.
  2. Cover and place in refrigerator to marinate until chilled.
  3. Serve with tortilla chips.
