French Toast


  • 1 c. cashews
  • 3 c. water
  • 1 Tbsp. honey
  • 1 Tbsp. maple syrup
  • 2 tsp. vanilla
  • ½ tsp. salt
  • 1 c. quick oats
  • ½ tsp. coriander
  • Whole-wheat bread


  1. Pour water into blender. Add cashews, oats, maple syrup, honey, vanilla, salt and coriander.
  2. Blend together until nice and smooth. Pour into bowl. Dip bread into batter. Place on skillet on moderate temperature.
  3. Brown on both sides. Top with applesauce or fruits, if you like.
