Fiesta Taco Salad


  • 1 med. onion, diced
  • 2 Tbsp. chili powder
  • 1 tsp. cumin
  • 1/4 tsp. red pepper flakes
  • 1/4 tsp. oregano
  • 1/2 c. water
  • 1/2 c. diced green chilies
  • 1/4 tsp. salt, or to taste
  • 1 pkg. Yves ground burger
  • 8 c. romaine lettuce, chopped
  • 1 c. hot chili beans
  • 1 c. sliced grape or cherry tomatoes
  • 1 c. cucumbers, diced
  • 1/2 c. jalapeño peppers, nacho style
  • 1+1/3 c. baked tortilla chips, crushed
  • 1 c. taco sauce
  • Tofutti sour supreme
  • salsa


  1. Spray medium skillet with a non-stick cooking spray and sauté diced onion until translucent. Add spices while onion is sautéing.
  2. When onions are tender , add water and green chilies. Continue to sauté until liquid is absorbed. Set aside.
  3. On 4 individual plates, layer the following ingredients in this order: 2 c. romaine lettuce, 1/2 cup burger mixture, 1/4 c. chili beans, 1/4 c. cucumbers, 1/4 c. tomatoes, 1 tablespoon jalapeño pepper slices, 1/4 c. taco sauce, 1/3 c. crushed tortilla chips.
  4. Garnish with salsa and Tofutti sour supreme if desired.
