Farmer’s Potato Fry


  • 2 Tbsp. oil
  • 1 c. diced onions
  • 1 Tbsp. fresh garlic
  • 1/2 c. water
  • 2 c. shredded cabbage
  • 4 c. diced eggplant
  • 5 c. potatoes, thinly sliced
  • 1/2 c. diced fresh red bell peppers
  • 1/2 tsp. seasoned salt
  • 1/2 tsp. salt
  • 1/2 tsp. McKay’s chicken seasoning
  • 1/4 tsp. red pepper flakes


  1. In a large skillet on med high heat combine the oil, onions, fresh garlic, water and seasonings and sauté.
  2. Add the potatoes and the rest of the ingredients and stir-fry until golden brown and tender, about 25-30 minutes. Serve hot.
