Fantastic Vanilla Pudding


  • 4 c. nondairy milk
  • 2/3 c. cornstarch
  • 1/4 c. maple syrup
  • 1 tsp. salt
  • 2 Tbsp. vanilla extract


  1. Combine all ingredients except vanilla in a medium saucepan and stir well. Bring to a boil over medium-high heat, stirring frequently, cooking until thickened. Stir in vanilla.
  2. Chill before serving.

If mixture is lumpy, run through food processor until smooth.
