• 1/2 c. sliced green pepper
  • 1/2 c. sliced red pepper
  • 1 c. carrot strips
  • 2 Tbsp. minced garlic
  • 1/2 c. sliced onions
  • 1 c. prepared soy curls
  • whole wheat flour tortillas


  1. Heat skillet and add oil, garlic, onions, peppers and carrots.
  2. Cook until crisp-tender and add soy curls. Stir-fry until all is heated.
  3. Place some of the filling in a warmed tortilla and fold over. Add salsa or vegan cheese if desired. Serve hot.
