Easy Black Bean Stew


  • 1 large can black beans, drained
  • 1 large onion, chopped
  • 3 cloves garlic, crushed
  • 1/2 c. chopped green peppers
  • 2 Tbsp. organic peanut butter
  • 1 tsp. olive oil
  • 2 Tbsp. nutritional yeast flakes
  • 2 Tbsp. potato flakes, opt.
  • water as needed


  1. Sauté onion and garlic in olive oil. Add green peppers, black beans, and yeast flakes.
  2. Stir in peanut butter. Add potato flakes to thicken stew or water to thin to desired consistency.

* Can be served over Rainbow Salad.
