Cucumber Salad


  • 4 c. cucumbers, thinly sliced
  • 1+1/4 tsp. sea salt
  • 2 Tbsp. fresh parsley, chopped
  • 1 clove garlic, minced
  • 3 Tbsp. fresh lemon juice
  • 3 Tbsp. turbinado sugar


  1. Place cucumbers and sea salt in a bowl. Mix thoroughly. Let stand for 30 minutes.
  2. Add remaining ingredients, mix well. Serve fresh, or allow to marinate overnight.
