Creole Brown Rice

Ingredients:

  • 1 Tbsp. olive oil
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 pkg. mock sausage crumbles
  • 15-ounce can stewed tomatoes
  • 10-ounce pkg. frozen peas
  • 1 tsp. onion powder
  • 1/4 tsp. cayenne pepper, optional
  • 3 c. steamed brown rice

Instructions:

  1. Sauté onion and garlic in olive oil until translucent. Add burger crumbles and sauté.
  2. Add remaining ingredients, cover and simmer over low heat until heated through.
