Cornmeal Porridge


  • 3 1/2 c. coconut milk or soy milk
  • 1/2 c. cornmeal
  • pinch of salt
  • 1/4 tsp. nutmeg
  • 1/2 tsp. vanilla
  • brown sugar or sweetener of choice


  1. In a medium saucepan, combine all ingredients and stir.
  2. Bring to a boil, stirring constantly. Cook, stirring, until thickened.
  3. Serve with dried fruit and nuts or seeds on top.
