- 3 1/2 c. coconut milk or soy milk
- 1/2 c. cornmeal
- pinch of salt
- 1/4 tsp. nutmeg
- 1/2 tsp. vanilla
- brown sugar or sweetener of choice
- In a medium saucepan, combine all ingredients and stir.
- Bring to a boil, stirring constantly. Cook, stirring, until thickened.
- Serve with dried fruit and nuts or seeds on top.
