Cornmeal Porridge


  • 1 c. yellow cornmeal
  • 4 c. water
  • 1/4 tsp. salt
  • 2 c. coconut milk
  • 1/2 c. brown sugar
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • sugar to taste


  1. In a medium bowl, mix the cornmeal with 1 cup water. Set aside.
  2. In a medium saucepan, combine 1 cup coconut milk and 2 cups water. Bring to a boil.
  3. Stir in cornmeal mixture. Add brown sugar, spices and coconut milk to taste. Cook, stirring, until thickened.
