Coconut Delight


  • 1 14 oz. can coconut milk
  • 4 Tbsp. chia seeds
  • 3 Tbsp. honey, maple syrup or agave nectar
  • 1 1/4 tsp. vanilla extract
  • Fruit (pineapple, mandarin oranges, bananas), or cherry pie filling


  1. In a medium bowl, combine coconut milk, vanilla and sweetener, mix well. Stir in chia seeds.
  2. Chill eight hours or overnight. Mix in fruit or pie filling. Garnish and serve.

* Also makes a great filling for a frozen pie.
