- 1 14 oz. can coconut milk
- 4 Tbsp. chia seeds
- 3 Tbsp. honey, maple syrup or agave nectar
- 1 1/4 tsp. vanilla extract
- Fruit (pineapple, mandarin oranges, bananas), or cherry pie filling
- In a medium bowl, combine coconut milk, vanilla and sweetener, mix well. Stir in chia seeds.
- Chill eight hours or overnight. Mix in fruit or pie filling. Garnish and serve.
* Also makes a great filling for a frozen pie.
