Chef Reilly’s Hummus Recipe


  • 2 c. canned chickpeas, drained
  • juice of 2 lemons
  • 1 c. tahina
  • 2 garlic cloves, minced
  • 1 1/2 Tbsp. minced shallot (1 small)
  • 3 Tbsp. vegetable or olive oil
  • 1/4 tsp. za’atar
  • salt to taste


Process chickpeas, lemon juice, garlic shallots, tahina and za’atar in food processor, adding oil slowly while processing. Process until smooth. Salt to taste.
