Carrot Oatmeal Squares


  • 2/3 c. packed brown sugar
  • 1 Tbsp. canola oil
  • 3/4 c. nut milk
  • 1 tsp. vanilla
  • 2 Tbsp. cornstarch
  • 3/4 c. whole wheat flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. shredded carrots
  • 1/2 c. raisins
  • 1/2 c. shredded coconut
  • 1 1/2 c. rolled oats


  1. In a medium mixing bowl, combine and mix dry ingredients.
  2. Add carrots, raisins, oil , vanilla and nut milk and mix well.
  3. Pour into oil-sprayed baking pan and bake at 350 degrees for 1/2 hour, or until done.
