Carob Fudge Brownies

Ingredients:

  • 1 c. oat flour
  • 1 c. whole wheat flour
  • 1/2 c. carob powder
  • 1 c. chopped walnuts
  • 1 Tbsp. coffee substitute
  • 1 Tbsp. aluminum free baking powder
  • 3/4 c. turbinado sugar or 1 Tbsp. stevia
  • 1/2 tsp. sea salt
  • 1/3 c. vegetable oil
  • 1 tsp. vanilla
  • 1 1/2 c. soy milk

Frosting:

  • 1/4 c. soy milk powder
  • 1/4 c. carob powder
  • 1/2 c. honey
  • 1/4 tsp. sea salt
  • 1/2 tsp. vanilla

Instructions:

  1. For brownie: In a medium mixing bowl, combine the dry ingredients and mix. Stir in oil, vanilla and soy milk.
  2. Pour into baking dish and bake at 350 degrees for 30 – 35 minutes or until done. Cool.
  3. For Frosting: Combine all ingredients and mix well. Spread over cooled brownies. Garnish with walnuts.
