3 ripe avocados
1 c. maple syrup
1 c. carob powder
1 tsp. vanilla
In a medium mixing bowl, mix all ingredients together until moistened. Blend with hand mixer until very smooth. If possible, chill overnight and blend again for best texture. Serve with non-dairy whipped topping.
* Variation: For “chocolate” mousse, fold a small amount of carob pudding into non-dairy whipped topping.
