Caribbean Bean Salad


  • 2 15-oz. cans black beans, rinsed and drained
  • 2 c. frozen organic corn
  • 1 c. chopped tomatoes
  • 1/4 c. finely diced purple onion
  • 1/3 c. fresh lime juice
  • 1/4 c. chopped fresh cilantro
  • 1/2 tsp. salt or to taste
  • zest of a fresh lime


  1. Combine all ingredients and mix well.
  2. Serve with corn chips scoops or in a taco or taco salad
