Brazilian Style Rice


  • 2 c. parboiled rice
  • 2+1/4 c. water
  • 1/2 medium onion, coarsely diced
  • 2 cloves garlic, crushed
  • 1 bunch cilantro, chopped
  • 1+1/2 tsp. grape seed oil


  1. Heat a medium sized saucepan over medium heat. Add oil, onion and garlic and sauté for about 1 minute.
  2. Add rice and stir to coat with the oil for another minute, then add the water and cilantro.
  3. Cover and simmer for 15 – 20 minutes or until all of the water is gone. Salt to taste.
