Blueberry Pancakes


  • 1 c. all-purpose flour
  • 1 c. white wheat flour
  • 4 tsp. baking powder
  • 2 tsp. baking soda
  • 2 Tbsp. oil
  • 2 tsp. sugar
  • 1/2 tsp. salt
  • 2 c. soy milk
  • 2 Tbsp. cornstarch
  • 1 c. fresh blueberries


  1. Mix all ingredients and pour onto hot griddle. When bubbles form and edges become firm, flip pancake and cook on other side until golden.
