Blueberry Dessert Pizza


Blueberry Sauce:

  • 2 c. grape juice, black cherry juice or blueberry juice
  • 4 c. fresh blueberries
  • 1/4 c. sugar
  • 1 tsp. vanilla
  • dash of cinnamon


  • 1/4 c. cornstarch
  • 1/4 c. cold juice

Icing for Drizzle:

  • 2 c. powdered sugar
  • 1/4 c. cold water
  • 1 tsp. vanilla

Oatmeal Pizza Dough:

  • 1 c. warm water
  • 1 tsp. salt
  • 1/4 c. sugar
  • 1 Tbsp. instant yeast
  • 1/4 c. oil
  • 1/4 c. cooked oatmeal
  • 2 1/4 c. unbleached flour
  • 1/4 c. whole wheat flour


  1. For the sauce, put all ingredients into a medium saucepan and bring to a boil.
  2. Mix slurry and slowly stir into the hot blueberries. Cook and stir until thickened. Set aside.
  3. When cool, stir in fresh blueberries.
  4. For crust: Combine warm water, sugar, salt and oil. Stir in oatmeal, yeast and 1 cup unbleached flour. Stir in the remaining flour a little at a time, then knead for 10 minutes. Let rise until doubled in bulk.
  5. For drizzle: Whip all ingredients together and set aside.
  6. Spread crust on two 12 inch pizza pans. Spread some of the drizzle over the dough, then top with blueberries.
  7. Bake at 350 degrees for 20 to 25 minutes. Remove from oven to cool.
  8. When cool, drizzle remaining icing over the top.
