Blackberry Cobbler


  • 2/3 C soymilk
  • 2 Tbsp olive oil
  • 1/3 c. honey
  • ½ tsp. salt
  • 3 tsp. Rumford baking powder or other aluminum-free baking powder
  • ½ c. whole wheat pastry flour
  • ¼ c. wheat germ
  • 1 ½ c. unbleached enriched flour
  • 2 large ripe bananas, mashed
  • 2 c. fresh blackberries or 1 (16 oz.) bag frozen


  1. Combine soymilk, honey and olive oil in bowl. Add mashed bananas. Add whole wheat flour and unbleached flour.
  2. Fold in baking powder, salt and wheat germ. Mix together. Spoon into bottom of oblong, oiled pan.
  3. Top with blackberries. Bake at 350 degrees for 45 minutes.
