Barley Stir Fry


  • 1 pound barley, cooked and rinsed
  • 1 c. diced carrots
  • 1 c. sweet green peas
  • 1 c. chopped cabbage
  • 2 scallions, chopped
  • 1/4 c. low sodium soy sauce
  • 1 Tbsp. chicken-style seasoning
  • 2 Tbsp. olive or canola oil


  1. In a large skillet, sauté scallions, carrots, cabbage and peas.
  2. Add barley and seasonings and cook until thoroughly heated.
