- 2 c. quick oats
- 1 1/2 c. natural peanut butter
- 1 c. ground flaxseed
- 2/3 c. pure maple syrup
- 2 tsp. pure vanilla
- 1 c. vegan peanut butter or butterscotch chips
- 1 c. shredded unsweetened coconut, opt.
- 1 c. roasted peanuts, coarsely chopped, opt.
- In a medium mixing bowl, combine oats, peanut butter, flaxseed, maple syrup, vanilla, and peanut or butterscotch chips.
- Using 1 tablespoon of dough, form into balls. Roll in coconut / peanuts.
