No Bake Peanut Butter Balls


  • 2 c. quick oats
  • 1 1/2 c. natural peanut butter
  • 1 c. ground flaxseed
  • 2/3 c. pure maple syrup
  • 2 tsp. pure vanilla
  • 1 c. vegan peanut butter or butterscotch chips
  • 1 c. shredded unsweetened coconut, opt.
  • 1 c. roasted peanuts, coarsely chopped, opt.


  1. In a medium mixing bowl, combine oats, peanut butter, flaxseed, maple syrup, vanilla, and peanut or butterscotch chips.
  2. Using 1 tablespoon of dough, form into balls. Roll in coconut / peanuts.
