Apricot Walnut Bars


  • 3 c. dried apricots
  • 3 c. water
  • 3 Tbsp. sugar
  • 1/2 tsp. cinnamon


  • 1+1/4 c. unbleached flour
  • 2/3 c. soy margarine
  • 1+1/4 c. quick oats
  • dash salt
  • dash cinnamon
  • 1 c. walnuts


  1. To make apricot puree, combine dried apricots, water, sugar and cinnamon in a medium saucepan. Cook until very soft. Place in food processor and puree until smooth.
  2. In a medium bowl, mix flour, oats, salt and cinnamon together. Cut in margarine.
  3. Layer the bottom of an oil-sprayed 9 x 13 inch baking pan with half of the crumble mixture. Press down with hands. Spread evenly with apricot puree. Mix walnuts with remaining crumble and sprinkle over the top.
  4. Cover with foil and bake at 350 degrees F for 35 – 45 minutes – until bubbly and lightly browned.
