Apple Oat Cookies


  • 3/4 c. soy margarine
  • 1 c. sugar
  • 1/2 c. brown sugar
  • 1 tsp. vanilla extract
  • 2 Tbsp. water
  • 1 3/4 c. all purpose flour
  • 2 Tbsp. cornstarch
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. quick oats
  • 1 medium apple, shredded
  • 1/2 c. walnuts or pecans, coarsely chopped
  • 1 c. powdered sugar
  • 2 Tbsp. almond milk
  • 1/2 tsp. vanilla


  1. In a medium mixing bowl, combine soy margarine, sugar and brown sugar and mix well with a hand mixer. Mix vanilla and water.
  2. In another bowl, combine flour, cornstarch, baking powder, cinnamon and salt.
  3. Add to the margarine and sugar mixture a little at a time, beating after each addition. Stir in oats a little at a time. Add apples and nuts.
  4. Using a tablespoon, form into balls and place on oil sprayed baking sheet, or use a silicone liner.
  5. Bake at 350 degrees for 10 – 15 minutes. Combine powdered sugar, almond milk and vanilla and mix well. Drizzle over cookies.
