- 1 large bunch kale
- 2 Tbsp. lemon juice
- 1/4 tsp. salt
- 1 shallot, finely sliced
- 1 crisp, sweet apple, finely sliced
- 1/2 c. finely slivered fennel bulb
- 3/4 c. walnuts
- 1/2 c. dried cranberries
- Wash kale, remove stems and chop leaves into bite sized pieces.
- Pour lemon juice and salt over kale and massage until softened.
- Add remaining ingredients, toss, and serve.
