Apple and Kale Salad


  • 1 large bunch kale
  • 2 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1 shallot, finely sliced
  • 1 crisp, sweet apple, finely sliced
  • 1/2 c. finely slivered fennel bulb
  • 3/4 c. walnuts
  • 1/2 c. dried cranberries


  1. Wash kale, remove stems and chop leaves into bite sized pieces.
  2. Pour lemon juice and salt over kale and massage until softened.
  3. Add remaining ingredients, toss, and serve.
