Apple Brown Rice Salad

Ingredients:

  • 2 c. apples, chopped
  • 2 c. brown rice, cooked
  • 1/2 c. celery, chopped
  • 1/2 c. fresh parsley, minced
  • 1/4 c. sunflower seeds
  • 1/2 c. spinach, shredded
  • 3 Tbsp. apple juice
  • juice of one lemon
  • 1/4 tsp. fresh ginger, minced
  • 1/2 tsp. sea salt
  • 4 curly lettuce leaves

Instructions:

  1. In a medium bowl, combine apples, rice, celery, parsley, spinach, and sunflower seeds.
  2. In a small bowl, stir together the apple juice, lemon juice, ginger, and sea salt. Drizzle over salad and arrange salad on a bed of curly lettuce.
