This is a nondairy mayonnaise substitute.
- 1 c. water
- 1/2 c. whole almonds
- 1/2 c. water
- 1/2 tsp. salt
- 1 tsp. onion powder
- 1 tsp. mustard powder
- 1/2 c. olive oil
- 2 Tbsp. lemon juice
- Bring the 1 cup water and almonds to a boil. Rinse with cold water and remove skins.
- In blender, blend blanched almonds, 1/2 cup water, salt, onion powder and mustard powder. Blend until very smooth.
- While blender is running, slowly pour in olive oil until mixture thickens. Pour into a bowl and fold in lemon juice.
