This is a nondairy mayonnaise substitute.


  • 1 c. water
  • 1/2 c. whole almonds
  • 1/2 c. water
  • 1/2 tsp. salt
  • 1 tsp. onion powder
  • 1 tsp. mustard powder
  • 1/2 c. olive oil
  • 2 Tbsp. lemon juice


  1. Bring the 1 cup water and almonds to a boil. Rinse with cold water and remove skins.
  2. In blender, blend blanched almonds, 1/2 cup water, salt, onion powder and mustard powder. Blend until very smooth.
  3. While blender is running, slowly pour in olive oil until mixture thickens. Pour into a bowl and fold in lemon juice.
