Blueberry Pancakes


  • 2 c. quick oats
  • ½ c. ground flaxseed
  • ¾ c. whole wheat flour
  • ¼ c. wheat germ
  • ¾ tsp. salt
  • 1 tsp. Rumford baking powder
  • 3 c. soymilk
  • 2 Tbsp. honey
  • 1 ½ c. blueberries


  1. Mix all dry ingredients together. Add soymilk, honey and blueberries and mix.
  2. Preheat skillet at 350 degrees. Use ¼ cup sized measuring cup to pour pancake batter onto griddle. Brown on both sides. Top the way you like.
